INGREDIENTS:
- 1 LB GROUND PORK
- 1 LB GROUND CHUCK
- 2 CUPS CHOPPED ONION
- 1 CHOPPED GREEN BELL PEPPER
- ½ CUP CHOPPED CELERY
- 1 TBSP HIGH CALIBER GRANULATED GARLIC
- ½ CUP DARK ROUX / PREPARED BEEF GRAVY
- 1 TBSP CAJUN SEASONING
- 1 TSP HIGH CALIBER COARSE SALT
- 6 CUPS BEEF STOCK
- 2 TBSP WORCESTERSHIRE SAUCE
- 2 HIGH CALIBER BAY LEAVES
- 1 TSP HIGH CALIBER GROUND THYME
- 1 TSP HOT SAUCE (YOUR FAVOURITE BRAND!)
- 1 TSP HIGH CALIBER BUTCHER GRIND BLACK PEPPER
- 2 TBSP HIGH CALIBER PARSLEY
- ½ CUP CHOPPED GREEN ONION
- 15 CUPS COOKED RICE (PACKED)
DIRECTIONS:
- In a large pot over medium heat cook pork and beef until meat is browned.
- Add onions, bell pepper, celery, and garlic; sauté for 2 minutes.
- Add roux and cook for additional 5 minutes.
- Add Cajun seasoning, salt, beef stock, Worcestershire sauce, bay leaves, thyme, hot sauce and pepper.
- Bring mixture to a boil, lower heat and simmer for 30 minutes.
- Add remaining onion, celery and bell pepper, cover pot and simmer for another 30 minutes.
- Stir in green onions and parsley, then add the rice and stir until completely mixed
