Fermento is a key ingredient in making fermented sausage. It is quite an involved subject, so take care when preparing this type of complex sausages.
Fermento is feeding the lactic acid bacterial culture. With the refined types of sugars in High Caliber Fermento, it accelerates and facilitates the rapid growth of the starter culture so it can acidify the sausage quickly and safely. The added Sodium Erythorbate and Ascorbic Acid also help with color stabilization and retention.
This Fermento includes the five ingredients of: Dextrose, Glucose Solids, Sugar, Sodium Erythorbate and Ascorbic Acid.
