PHOSPHATE, BRIFISOL 512 EMULSION (500g/PKG)

Description

Generally used for water retention.   Retards oxidation, improves yields and increases emulsion stability.  Follow manufacturer’s usage.

Usage:  3.75 – 5 grams per kilo of meat

BRIFISOL® 512 is an agglomerated blend of polyphosphates, designed to remain completely water soluble and effective even at very low
processing temperatures and in the presence of salt.
• BRIFISOL® 512 can be applied by injection, marinating or tumbling (massaging) into any muscle meat. It may also be used in sausage
manufacturing. The method used depends on customer requirements and finished product characteristics.
