Makes an excellent jerky. Not over flavoured and not over salty. If you want spice in your life you can always add some jalopena spice or Cajun. I also love the fact it’s got direct measurements on them, where others I’ve used give you directions for the whole pack and you have to do all the math for just portions.

I am attempting this weekend on a round roast and wanted to know how long you leave the seasoning and cure before you smoke?

HI Jack,
Sorry for the delayed response, we hope you had good success making your jerky. The recommended time for marinating your meat strips is 24 – 36 hours (so the cure and seasonings can flavor the meat). For Ground meat, then you can mix the ground meat, flavors and cure and place the strips on the racks directly in the oven or smoker. Please ensure that you reach the internal temperature of 71 C. You may dehydrate further if desired.
