Cooking with Wet Smoke Chips:
1. Soak a handful of barrel chips in water for 30 minutes or longer then drain. The moisture prevents the chips from lighting and produces a longer flavor enhancing smoke.
2. Gas Grills use a smoke box or foil pouch over high burner and cook with lid closed.
3. Charcoal Grills or Smokers, wrap chips in foil with ends open or place directly on the charcoal and cook with lid closed. Preheat grill and chips for 10 minutes prior to cooking.
